Talking Tacos with A Taste of Koko

At this year’s Rock Your Taco, 14 top chefs from around the country battled it out for the ultimate ‘taco master’ title. These talented chefs took this typical street food to new heights, incorporating a variety of meats to create unique combinations. Austin’s culinary scene was represented by chefs David Bull, Bryce Gilmore and Tyson Cole, who presented some of the most flavorful – and crowdpleasing – tacos of the night.

I started off the evening with one of the Patron Tequila Grapefruit Palomas before working my around the taco tents.

And with that, here are my favorite tacos of the night…

Ming Tsai

Chinese Red Roast Duck Taco with sambal-mango salsa, crunchy taco shell and avocado purée. Loved the juicy roast duck with a sweet mango salsa in a crunchy taco. Great guy!

David Bull

Black Heart Taco – rich goat heart morcilla sausage with a bright parsley salad and lemon crema in a fried flour taco, coated with chicken liver mousse and double wrapped with a flour tortilla. Spicy, flavorful with a great texture contrast.

John Currence

Red Neck Taco with red adobo-braised lamb necks on soft corn tortilla with corn, cotija cheese and a smoky red salsa.

Tyson Cole

Coconut milk and lemongrass poached sea bass with yellow tomatoes, Thai chili, aji amarillo sauce, cilantro and mint on a crispy kefir-lime corn tortilla.

With one of the longest lines at Rock Your Taco, Tyson Cole was cool as a cucumber slowly frying up his corn tortilla and individually plating each as a work of art. This was hands down, my favorite taco at Rock Your Taco. The sea bass was flavorful and tender with a crispy, fresh-out-of-the-fryer corn tortilla.

Richad Blais
Octopus and Lamb Picadillo Taco with fresh herbs and edible flowers in a soft tortilla. This was a beautifully plated taco with a bold flavor. It was also the winning taco!
