Austin Ewald has been with the Jacoby Restaurant Group since the beginning, starting as a cook at Jacoby’s Restaurant & Mercantile when it opened in 2013. Ewald has grown along with the restaurant group, working his way up to his current position as Chef de Cuisine of Grizzelda’s, the team’s second concept focusing on modern Mexican cuisine.
After growing up in San Angelo, TX, Ewald moved to Lubbock, TX to attend Texas Tech University for Restaurant & Hotel Institutional Management. It was during college when he first began working in the kitchen and developing his cooking skills by absorbing as much as he could around him. Ewald loves using food that is local and sustainable, which is why he particularly enjoys working with the Jacoby’s Restaurant Group where ingredients are sourced directly from the Jacoby Ranch in Melvin, TX. Always looking to up his cooking game, Ewald spends his days off eating out or experimenting with new recipes at home.
