Executive Chef Brian Moses’ culinary career began in Austin and has stuck true to his roots. Originally from Fort Worth, Brian came to Austin to attend the University of Texas but fell in love with the food scene and never looked back.
Moses comes full circle within Parkside Projects as he actually began his career at Chef Shawn Cirkiel’s flagship eatery Parkside upon graduating culinary school. Since his time at Parkside, Brian honed his skills cooking at some of the most highly acclaimed kitchens across the country, including Thomas Keller’s prestigious French bistro Bouchon in Napa, CA. Eventually Brian returned to his homestate of Texas where he accepted a position as Chef de Cuisine at the ranch-inspired Contigo before finally taking the helm at Olive & June.
Armed with such comprehensive kitchen experience, Moses puts his culinary talent to work as the executive chef at Olive & June, Cirkiel’s Southern Italian-inspired restaurant. His return to the Parkside Projects family is an appropriate homecoming. Moses is now applying his many years of culinary education and vast experience to manning the kitchen and overseeing all aspects of the authentic Italian eatery’s menu, food ordering and kitchen staff.
