Christopher W. Graves is the Sous Chef at Jacoby’s Restaurant & Mercantile in Austin. Chris joined Jacoby’s in late 2014, soon after they opened. Three milestones he notes are receiving his first knife, having his first feature make the menu and becoming a Sous. His favorite part of the job is breaking down the sides of beef. In his spare time, you can find him hiking, practicing archery and playing video games.
