Chef Brockway started his training at the Culinary Institute of America in Hyde Park, New York and has held leadership positions at The Old Inn on the Green, One Market Restaurant in San Francisco, Ken Oringer’s Clio in Boston and in Austin both Uchiko and Quo.
Damien Brockway began cooking in the northwest corner of Connecticut near his home town of Norfolk. He has spent the last 17 years honing his culinary skills and developing a passion for food all over the nation. Working as Executive Chef alongside Earthman at Counter 3. Five. VII, Chef Brockway and his team deliver a unique front row dining experience in this chef driven concept.
