Chef Rico’s love of food began at age 10 when he cooked his family’s Thanksgiving meal. From there and throughout Edgar’s life, there have been experiences that have reaffirmed his destiny in maiz. Nixta Taqueria is the culmination of who he is and what food means to him – imaginative creations that are steeped in technique, history, tradition and finesse.
Drawing inspirations from Mexican cuisine, as well as influences from his extensive culinary background in other worldly cuisines, Chef Rico will be creating menu items that highlight the star of the concept: heritage corn with origins from Mexico.
His culinary background is extensive, with the majority of his experience taking place in LA: Craft, Sqirl, Son of a Gun, Trois Mec, as well as Pujol in Mexico City. He most recently was the Chef de Cuisine of Peached Tortilla’s event space, Peached Social House.
