Chef Erica Waksmunski started as a pastry commis in Chicago at the Everest and quickly moved up to pastry chef at Flyte in Nashville, TN. After spending a few years in Nashville she headed to the West coast and staged around California until she landed the pastry chef position at Chez TJ in Mountain View. In 2012 she headed down to Austin, TX to take over as executive pastry chef of Congress Austin and Second Bar + Kitchen. She recently left that job to open her food trailer Red Star Southern . In fall of 2014 she accepted an offer from Chef Shawn Cirkiel and joined his Parkside projects restaurant group as their pastry chef. Erica’s trailer remains open in Austin, TX.
