Ethan Holmes’s intense love for food began at the age of four. When most kids were watching Saturday morning cartoons, Holmes cooked alongside his Texas-born, German-bred grandmother. She would prepare elaborate meals with great ease. Under the guidance of his Grandma Blanche, Holmes developed a skillset that has helped shape his culinary style.
After earning a bachelor’s degree in communication studies from St. Edward’s University in Austin, Holmes attended the New England Culinary Institute in Montpelier, Vermont, where he earned an associate degree of occupational studies in culinary arts and several awards, including the prestigious “Golden Tongs Award” for overall excellence. Since then, Holmes’ career has taken him to notable properties, brands and concepts, such as: Shutters on the Beach in Los Angeles, Omni Rancho Las Palmas Resort & Spa in Palm Springs, Austin-based Snap Kitchen, and La Corsha Hospitality Group’s Second Bar + Kitchen downtown.
As executive chef at Mattie’s at Green Pastures, Holmes works to continue Green Pastures’ tradition of Southern comfort food, as well as incorporating his own passions for wellness and plant-based ingredients in new and exciting ways.
When he’s not in the kitchen, Holmes is working to earn an MBA from Baylor University’s Hankamer School of Business. Holmes’s hobbies include abstract painting, being outdoors, and seeing live music around Austin.
