A New Jersey native, Chef Grae Nonas is a CIA graduate and spent his early career cooking in renowned kitchens on the East and West coasts, including Los Angeles favorites Animal and Son of A Gun. He first arrived in Austin in 2013 as co-founder and co-executive chef of Olamaie. During his time at Olamaie, Nonas received many accolades, including Food & Wine magazine’s Best New Chef and James Beard Foundation ‘Rising Star Chef’ nominations. Nonas became the Executive Chef of Carpenters Hall at The Carpenter Hotel in 2017. With “new eyes on old Texas”, Carpenters Hall is an all-day restaurant that celebrates the many cultures and food traditions that have influenced Austin and Texas cuisine. Carpenters Hall opened to great reviews in November 2018. Grae Nonas lives in Austin with his wife and two young children.
