Jesse Griffiths created Dai Due in 2006 with Tamara Mayfield as an Austin supper club and farmers market stand with a focus on ingredients that represent Central Texas. In 2014, Griffiths opened Dai Due Butcher Shop & Supper Club, the brick-and-mortar incarnation of his concept, which continues to serve fresh, fairly-produced food from Texas farmers and ranchers. The James Beard Award-finalist author of Afield: A Chef’s Guide to Preparing and Cooking Wild Game and Fish, Griffiths is at the forefront of the hunting-cooking movement with his popular practical hunting classes and Dai Due’s strictly-local butcher shop.
