Luis Colon was born and raised in Puerto Rico. He graduated from Johnson and Wales Miami and has been in the industry for 15 years. He served as an intern in Chicago at the Publican under Chef Paul Kahan and Alinea under Chef Grant Achatz. Luis has worked for the Town House in Chilhowi, VA and he served as a Sous Chef at San Antonio restaurants Bella on the River and Biga on the Banks. Today Luis is the chef and owner of Folc in San Antonio.
