Mary Cuclis: General Manager and Chef of Pondicheri
Mary Cuclis was born in Texas but spent most of her childhood living overseas. Growing up with her Greek family in London, Moscow and Hong Kong inspired a lifelong curiosity for a wide variety of cultures, and introduced the idea of cuisine as a cultural door. Her appreciation for freshness and local ingredients stems from her grandfather’s garden, which they tended together from childhood. He taught her how to cook not from scratch, but from seeds.
Her culinary career began in Hong Kong, working in Alvin Leung’s Bo Innovation. After returning to Houston, Mary was one of the opening team members of Pondicheri, where she acquired a new set of cooking techniques as well as experiencing the breadth of Indian spices.
