Michael Paley is the Executive Chef of Central Standard and Caf̩ No S̩ restaurants at the South Congress Hotel, also serving as Executive Chef of the South Congress Hotel overseeing events, in-room dining and bar menus for the lobby bar and pool bar. Prior to joining the South Congress Hotel, Paley was Executive Chef of Metropole at the 21c Museum Hotel in Cincinnati, OH, and before that, the Executive Chef of the acclaimed Proof on Main in Louisville, KY. He was also the Executive Chef and Partner at Garage Bar in Louisville. Previously, Chef Paley worked with legendary chefs and operators in New York City such as Daniel Boulud and Drew Nieporent of Myriad Restaurant Group. The South Congress Hotel events staff, under the direction of Executive Chef Michael Paley, creates unique menus and bespoke experiences for every event.
