Upon graduating Culinary Institute of America in New York, Flores quickly established himself in the flourishing Dallas food scene. Flores opened Casa Rubia at Trinity Groves in West Dallas in 2013 specializing in Spanish cuisine. Casa Rubia was nominated by the James Beard Foundation for ‘Best New Restaurant’ in 2014 and a Texas Monthly ‘Top Ten Best New Restaurants’ in 2014. Casa Rubia received a Four Star review from the Dallas Morning News and was selected as one of the ‘Best Restaurants in the South’ by Southern Living Magazine. Chef Flores was a ‘Food & Wine Best New Chef’ semi-finalist in 2013, 2014 and 2015, and James Beard Foundation Best Chef Southwest finalist in 2015. Flores’ newest endeavor is Whistle Britches – Chicken, Biscuits and Beer in Dallas, Texas recently earning D Magazine ’10 Best New Restaurants’ in 2016.
