Tim Lane started his cooking career in grade school, when cooking programming inspired him to cook family meals. Successful at this task, he found himself working in kitchens around Dallas/Fort Worth. At 20, he entered the Le Cordon Bleu program in Austin, simultaneously landing a position at Asti Trattoria with Emmett and Lisa Fox. At Asti, Lane’s love affair with the simplicity and quality of Italian food blossomed. A stint at WD~50 in New York, left Lane fascinated with exploring the science behind food. As sous chef for Cristina Bowerman at Glass Hosteria in Rome, the pair earned a Michelin star that it holds to date. During Lane’s nine year stint in Italy, his passion for fusing the fundamentals and the science of cooking. It’s that passion he brings to Austin’s Burn Pizza + Bar as Chef de Cuisine. In his free time, Lane teaches culinary courses and dreams of creating a stage exchange program with Italy.
