Tom Micklethwait is the owner and pitmaster of Micklethwait Craft Meats and Taco Bronco. A native Austinite, Tom creates unique takes on traditional Texas cuisine.
While working as a baker at beloved Austin restaurant Vespaio, he began experimenting with his own smoked meats and hosting backyard barbecue parties — perfecting his signature recipes. Not long after, he set his sights on opening his own BBQ joint. In his true DIY fashion, he salvaged a vintage Comet trailer, transforming it into a full-service food truck offering up a completely made-from-scratch menu. Tom served his first barbecue plate out of the window of that trailer in December 2012.
Just a few years later, Micklethwait Craft Meats was named as one of the Top Ten BBQ Joints in the State by Texas Monthly. Fast-forward to 2020 and the Micklethwait name is synonymous with some of the best barbecue in Texas.
This year, Tom and partners Ren Garcia and Javier Montesinos opened Taco Bronco, a taqueria barbecue joint serving slow-smoked meats and Texas-style tacos from a gussied-up horse trailer in East Austin.
